De Knockando distilleerderij werd in 1898 opgericht en in 1968 na sluitingen en overnames grondig verbouwd. Knockando werd midden jaren zeventig op de Britse markt gebracht en in 1978 voor het eerst uitgevoerd. Er wordt geen kunstmatige kleur toegevoegd, de Knockando Single Malt is een volkomen natuurlijk product. Knockando was ook als eerste distilleerderij aangesloten op het electriciteitsnet. In het warehouse staan twee wash en twee spirit stills. Men gebruikt vooral ex bourbonvaten en een klein deel sherryvaten voor de rijping. Het water haalt men reeds vanaf de oprichting uit de Cardnach Spring en het koelwater uit de rivier de Spey. In tegenstelling tot andere single malts wordt de malt van Knockandu niet op een vooraf bepaalde leeftijd gebotteld, maar enkel wanneer men vindt dat de juiste mate van rijpheid is bereikt. Op de fles staat de datum van distillatie. Deze oudere versie van Knockando heeft gerijpt op sherry vaten, is aangenaam met rijke fruitige tonen, verkregen door een speciale trage rijping, die de complexiteit en het elegante fruitige karakter van Knockando verhoogt.

Palate: Very thick and rich, with notes of nutmeg and cardamom pepping up a core of gorgeous old sherry and damson jam. This is exactly what you want from decent sherry-matured Speyside whisky; it?s not too dry, not too rubbery, it has a hint of umami too.
